Sukiyaki (鋤焼 aka すき焼き)

Sukiyaki is the conjugation of the words “suki”, which is plough in Japanese, and “yaki”, which is grilled or broiled in Japanese. It is named as such because it was a dish whereby meat was broiled on the plough. It was popularised by the Japanese hit , Ue o Muite Arukou (otherwise known as Sukiyaki in other countries) which attained the pole position of the Billboard Hot 100 charts in the United States.

Two common ways of cooking

  • Kanto Style

It is based on a beef pot whereby its soup base is made out of shoyu (soy sauce), sugar, mirin (rice wine), sake and water. After cooking the base, simmer the meat and vegetables in the base.

  • Kansai Style

Its cooks the meat first then seasons it with sugar and soy sauce, vegetables are added. After boiling down the sauce, add in the sake and water.

Common ingredients

• Tofu
• “Negi“(type of scallion)
• Vegetables
• Japanese mushrooms e.g Shiitake mushrooms
• Shirataki noodles

What makes sukiyaki interesting is that the beef and vegetables are dipped into raw eggs before eating. While it may seem weird, the egg enhances the taste of sauce, causing the meat and vegetables to become tastier.

Types of sukiyaki that is common in Japanese restaurants in Singapore include the beef and salmon sukiyaki. Sometimes, they are served together. Many recipes and videos on how to prepare sukiyaki can be found, making Sukiyaki an extremely accessible dish.

Hurry down to the nearest Sukiyaki shop or pester your friends to cook it for you, you do not want to miss Sukiyaki!
